The vines at Château d'ESCABES are all classified in the GAILLAC Appellation. They are planted in a single block on different slopes surrounding the Château. The location of this vineyard, at the crossroads of the Mediterranean and Oceanic influences, between the Autan wind and the West wind, on Boulbènes soils (silt-clay-limestone) gives a remarkable freshness to the wines produced.
No pesticides or insecticides are used throughout the vine-growing cycle, and no herbicides are used when working the soil. This ethical choice has earned us the Agriculture Biologique (AB) label in 2021
A subtle blend of Syrah (50%), Duras and Braucol (25%). The plots are an average of 35 years old and are planted in cordon de Royat to ensure even ripening.
The grapes are harvested at the end of September, a period when there are fewer hours of sunshine, favouring slow, regular ripening. The destemmed harvest is fermented in concrete vats, with strict temperature control to ensure gentle extraction. The wine is matured in vats.
Intense, vivid shades of purplish red, the gourmet aromas of blueberry and blackcurrant mingle with Mediterranean spices. The roundness on the palate is completed by hints of liquorice on a silky, elegant structure. Serve between 17° and 18° with grilled meats such as duck breast, leg of lamb or vegetable pie.
