The vines at Château d'ESCABES are all classified in the GAILLAC Appellation area. They are planted in a single block on different slopes surrounding the Château. The location of this vineyard, at the crossroads of the Mediterranean and Oceanic influences, between the Autan wind and the West wind, on Boulbènes soils (silt-clay-limestone) gives a remarkable freshness to the wines produced.
No pesticides or insecticides are used throughout the vine-growing cycle, and no herbicides are used when working the soil. This ethical choice has earned us the Agriculture Biologique (AB) label in 2021
100% BRAUCOL grape variety. This grape variety is without doubt the oldest in the South-West. Its aptitude for ageing and maturing is confirmed by the translation of its other name, Fer Servadou, from the Occitan Servadou: "Easy to Keep".
Only 20 000 bottles are produced from a rigorous selection of plots. This is one of the estate's latest ripening grape varieties, requiring more time to fully express its characteristics. The destemmed harvest is fermented in concrete vats, with strict temperature control to ensure gentle extraction.
Intense Morello cherry red colour, the aromas of wild berries supported by hints of menthol give this wine remarkable freshness. The spicy flavours of violet and blackcurrant complement the assertive tannic structure, with a smooth finish. Decant and serve at between 17° and 18°. Goes well with stews, meats in sauce and mature cheeses.
