The vines at Château d'ESCABES are all classified in the GAILLAC Appellation. They are planted in a single block on different slopes surrounding the Château. The location of this vineyard, at the crossroads of the Mediterranean and Oceanic influences, between the Autan wind and the West wind, on Boulbènes soils (silt-clay-limestone) gives a remarkable freshness to the wines produced.
No pesticides or insecticides are used throughout the vine-growing cycle, and no herbicides are used when working the soil. This ethical choice has earned us the Agriculture Biologique (AB) label in 2021
A blend of Loin de L'œil 40%, Mauzac 40%, Muscadelle 10% and Sauvignon 10%. The 4 Musketeers come together to bring out the best in your taste buds.
The grapes are harvested at the crack of dawn, and only the low- pressed juice is kept for this cuvée. Fermentation and maturing take place in 600-litre demi muids, followed by batonage on fine lees. Blending is carried out at the end of the maturing process, after 14 to 16 months.
Clear and brilliant, the greenish-white colour is very delicate. The aromas are complex, marked by exotic fruits : lychees, mango, pear, honeysuckle and acacia. The palate is elegant, full-bodied and well- balanced, with a fine, slightly salty and spicy finish. Serve between 10°-11°. This is a wine for all the right occasions, to accompany aperitifs as well as fish and shellfish dishes, in tartar or sauce such as Sabayon, scallops snacked with truffles, or poultry such as duck, pheasant or strong cheeses.
