The vines at Château d'ESCABES are all classified in the GAILLAC Appellation. They are planted in a single block on different slopes surrounding the Château. The location of this vineyard, at the crossroads of the Mediterranean and Oceanic influences, between the Autan wind and the West wind, on Boulbènes soils (silt-clay-limestone) gives a remarkable freshness to the wines produced.
No pesticides or insecticides are used throughout the vine-growing cycle, and no herbicides are used when working the soil. This ethical choice has earned us the Agriculture Biologique (AB) label in 2021
A blend of Muscadelle Sauvignon and Loin de L'œil. The East West facing plots benefit from generous sunshine, which allows the grapes to ripen slowly, preserving their natural freshness.
The grapes are harvested in mid-September, when there are fewer hours of sunshine, favouring slow, regular ripening. The destemmed harvest is pressed at a low temperature of 10°C, and at low pressure. The juice is then fermented in temperature-controlled stainless steel vats, followed by a maturing process with winter stirring.
Greenish-white highlights catch the eye. Floral and citrus aromas are followed by a round palate with hints of minerality and white-fleshed fruit supported by an elegant freshness. Serve between 12° and 14°C with white meats, leg of lamb, salmon in Sabayon sauce, goat's cheese or vegetable pie.
